This mouthwatering vegan recipe is a delicious yet nutritious and healthy meal. This roasted squash dish is a nice balance between heat and sweet and will be all the rave at your next summer event!
Ingredients:
2 Whole |
Summer Squash |
¼ Cup |
Olive Oil |
3 Cloves |
Fresh Garlic (finely chopped) |
1 teaspoon |
Fresh Scotch Bonnet Pepper (finely chopped) |
3 tablespoons |
Honey |

Salt to taste |
1 teaspoon |
Red pepper flakes for garnish (Optional) |
Directions:
- Preheat oven to 450 degrees F (230 degrees C).
- Trim the ends of squash, and cut crosswise to make ½ inch circular pieces. In a large bowl, toss the squash with olive oil, garlic, chopped Scotch Bonnet pepper, honey, and salt.
- Place ingredients in a shallow baking dish lined with aluminum foil
- Roast the squash until it becomes fragrant and begins to brown, 5-10 minutes. Check squash after five minutes and stir occasionally to avoid burning.
- Remove baking dish from oven and sprinkle with red pepper flakes for garnish (Optional).
